Shirataki noodle vegetable stir fry (Japanese recipe)
- 1 large pack shirataki noodles, parboiled
- 2 ½ cups carrots, shredded
- 1 cup green onions, cut into long strips
- 1 Tbsp olive oil or sesame oil
- 1 ½ Tbsp sugar
- 1 ½ Tbsp shoyu kouji
- 3 Tbsp mirin
- 3 Tbsp rice vinegar
- 1 Tbsp toasted sesame seeds
- Heat a large saute pan with the oil and add the carrots and cook for 2 – 3 minutes.
- Next add the green onions and allow to slightly brown.
- Next add sugar, shoyu kouji, and mirin followed by the shirataki noodles and give the noodles a few stirs to distritube the seasonings.
- Lastly, add rice vinegar and pepper.
- Stir a couple of times and reduce liquid completely and serve.
