Ingredients

  • 1 large pack shirataki noodles, parboiled
  • 2 1/2 cups carrots, shredded
  • 1 cup green onions, cut into long strips
  • 1 Tbsp olive oil or sesame oil
  • 1 1/2 Tbsp sugar
  • 1 1/2 Tbsp shoyu kouji
  • 3 Tbsp mirin
  • 3 Tbsp rice vinegar
  • 1 Tbsp toasted sesame seeds

Instructions

  1. Heat a large saute pan with the oil and add the carrots and cook for 2 – 3 minutes.
  2. Next add the green onions and allow to slightly brown.
  3. Next add sugar, shoyu kouji, and mirin followed by the shirataki noodles and give the noodles a few stirs to distritube the seasonings.
  4. Lastly, add rice vinegar and pepper.
  5. Stir a couple of times and reduce liquid completely and serve.
