Ingredients

  • 3 tablespoons unsalted butter
  • 1 cup red onion (coarsely chopped)
  • 28 oz tomatoes (i used one can)
  • 1 teaspoon tomato paste
  • 2 cups chicken broth
  • 1 basil sprig (i used 6 leaves )
  • fresh cracked pepper (to taste)
  • extra-virgin olive oil (to garnish)

Instructions

  1. In a large pot, melt the butter. Add the onion and cook over moderate heat, stirring, until softened, about 5 minutes.
  2. Add the tomatoes and their juices, along with the tomato paste and cook, stirring, for 5 minutes.
  3. Add the broth and basil and season with pepper. Simmer about 25 minutes.
  4. Serve with bread, croutons or with a grilled cheese
  5. Give self pat on the back or ask your companion to, for making this fantastic soup!
  6. Enjoy!

Notes

Optional- Discard the basil before you puree
