Kabayaki sauce is traditionally used to season unagi (grilled eel) in Japan. But you can use it for many other foods too and it’s a tasty way to change things up if you want something different.

Ingredients

Scale
  • 1/4 cup sake
  • 2 Tbsp mirin
  • 2 Tbsp soy sauce
  • 1/2 Tbsp sugar

Instructions

  1. First measure out all ingredients for the sauce and combine in a sauce pan.
  2. On medium heat bring to a simmer and allow to reduce, until it gets slightly thick 7-10 min.
  3. If you want it thicker or more concentrated cook 3-5 minutes longer, but watch closely to prevent burning.
  4. Remove from heat and drizzle over your favorite unagi (eel), tofu, fish or sushi!
